Plantain Chips Recipe – Crispy Homemade Snack
We loved these chips on our recent trip to Cartagena so we wanted to make them as home! Simple recipe, step-by-step instructions, and frying tips for perfect crunch.
Recipe Overview
Colombian plantain chips, known as platanitos, are a popular snack in Colombia made from thinly sliced green plantains that are fried until golden and crispy.
They’re crunchy, lightly salty, and perfect as a snack or side dish.
This recipe shows you how to make authentic-style plantain chips at home using just a few ingredients.
Ingredients
2 green plantains (unripe)
Vegetable oil (for frying)
Salt (to taste)
Optional: lime juice, chili powder, garlic powder
Instructions
1. Prepare the plantains
Peel the green plantains by cutting off the ends and slicing the skin lengthwise. Remove the peel carefully.
2. Slice thinly
Cut the plantains into very thin slices (the thinner they are, the crispier they become). A mandoline slicer works best.
3. Heat the oil
Heat oil in a deep pan to about 170–180°C (340–360°F).
4. Fry the chips
Fry the slices in small batches for 2–4 minutes, stirring occasionally, until golden and crisp.
5. Drain and season
Remove and place on paper towels. Immediately sprinkle with salt and optional seasonings.
6. Serve
Serve warm or let cool for extra crunch. Great on their own or with dips.
Cooking Tips for Perfect Plantain Chips
Use green (unripe) plantains for crispy texture

Do not overcrowd the pan
Remove chips when light golden—they continue to crisp as they cool
Store in an airtight container once cooled
